My interest in cooking began at an early age. Growing up in Spain and Italy and passing a good part of my formative years in the kitchen of our home under the care of our housekeepers, I recall the scents and colors of the food that was prepared fresh for us at every meal. In Madrid these ladies would prepare platters of croquetas and tortilla espanola or gazpacho and paellas that would become our meals.

In Rome, the tortilla de patatas and croquetas became fresh pasta, from linguini to spinach and ricotta filled ravioli laid out on the marble top of our kitchen table. These pastas were made and served to us that day. They were followed by a succulent dish of pollo alla cacciatora or a pork roast plugged with garlic and redolent of crushed fennel seed.

I carried the memories of these many hours spent watching from the kitchen table, along with the images of the many street markets laden with fresh vegetables and fruits and the varied butchers and bakers scattered around these European cities.

I created Savor Brooklyn in this spirit, hoping to bring the flavors of these home cooked meals from my memories to your family and friends. At Savor, I use products available in the New York City farmers markets and the many smaller food purveyors in our area, to create menus for you based on the plentiful regional product available in this area. The recipes produced by Savor Brooklyn are not overworked, but are prepared with the integrity of the traditional Spanish and Italian recipes adapted to regional and seasonal ingredients.
